Aiden Byrne is head chef and owner of The Collingwood, a bar and restaurant in West Kirby.[1] and of The Church Green in Lymm, Cheshire.[2] He also runs the British Grill in the Craxton Wood hotel near Chester.[3]
In 2002 he earned a Michelin star for his cooking in The Commons Restaurant in Dublin, Ireland. Before The Commons Restaurant he worked at Roscoff Restaurant under Paul Rankin and Peacock Alley under Conrad Gallagher[4]
He was previously Head Chef of the Grill Room at The Dorchester Hotel, London,[5] though he left in January 2009 to run his own pub in Cheshire[6]
While Head Chef at Adlards in Norwich at the age of 22, Aiden Byrne was the youngest chef to win a Michelin Star.
Aiden has worked at a number of Michelin-Starred establishments. At Danesfield House and Spa[7], near Marlow, Buckinghamshire, Aiden was Executive Chef of the Oak Room and The Orangery Restaurants.[8] Before this Aiden spent two years as Head Chef of the Michelin-Starred restaurant 'Tom Aikens'.[5] Aiden had also worked previously with Tom Aikens at Pied à Terre as Sous chef.[9]
Aiden has recently appeared on the television programme 'Masterchef 2008' where he coined the phrase "I lost a bit of sleep last night", when the remaining 3 amateur chefs had to cook for 7 Michelin-starred Chefs at the Dorchester Hotel.[10]
Aiden's first book was released September 2008 titled 'Made in Great Britain' along with a video podcast series of the same name based on the book, produced by pod3.tv.[11]
